Inspired by the adorable baby rainbow carrots Fat Radish Farm had at the market this past weekend, I went looking for a tasty way to prepare them. Roasting is a fool-proof method sure to be loved by the entire family and is easy to do outside on the grill. They will make a colorful addition to your Independence Day celebration!
Roasted Baby Rainbow Carrots

Toss 3 bunches baby rainbow carrots, 1 tablespoon olive oil and 1/2 teaspoon kosher salt on a baking sheet; arrange in a single layer. Roast at 450 degrees F, turning once, until tender and slightly browned, 15 minutes. Sprinkle with salt and chopped chives.
