Chef Brian Battistella, from The Berkeley Cafe, worked his way through some of the most famous kitchens in New Orleans. He survived four years at the world renowned Commander's Palace where he trained under two James Beard Foundation Award winning chefs. We are thrilled to have him joining us at the market preparing dishes from our farm fresh market ingredients.
Refreshing Watermelon Salad
ACTIVE: 20 MIN TOTAL TIME: 20 MIN SERVINGS: 15 KEY: SPRING, SUMMER, DINNER PARTY, SALAD, FAST, HEALTHY, MAKE AHEAD, VEGETARIAN, LUNCH, SNACK, STARTER
INGREDIENTS 3 tablespoons lime juice 1 cup sliced red onion, cut lengthwise 15 cups cubed watermelon 3 cups cubed English cucumber 1 (8 ounce) package feta cheese, crumbled 1/2 cup chopped fresh cilantro OR micro-cilantro cracked black pepper sea salt
HOW TO MAKE THIS RECIPE 1 |In a small bowl, pour lime juice over red onions. Allow to marinate while assembling the salad. 2 | Gently combine the watermelon, cucumber, feta cheese, and cilantro in a large bowl. Season with black pepper. Toss watermelon salad with marinated onions and season with sea salt just before serving.
